Apples, Sprouts + Bacon



I am ashamed to say that my Paleo-ish journey has taken a turn for the worst as school has taken over and the calendar has filled to the brimm. We are literally running here there and everywhere, like so many of y'all - especially during dinner time. "Healthy" meals for us have started to consist of chick fil a instead of McDonald's!

Enter this incredibly easy and delicious side dish that can easily stand in for a main meal itself. I swear my brother taught me this combo, but he doesn't remember it so I'm claiming this vision for myself! Green apples, sprouts and crispy bacon. I mean, what could go wrong with that?

The best part is, this is a non-recipe recipe! Simple ingredients combined and roasted - I mean, it can't get easier than that can it?


APPLES, SPROUTS AND BACON

INGREDIENTS

Brussel Sprouts (one bag), halved

Four slices of bacon, diced

Large Granny Smith apple, diced

1-2 TBS Olive Oil

1 TBS dried rosemary

Salt + Pepper, to taste

Fresh minced rosemary, optional

DIRECTIONS

Preheat oven to 400 degrees.

Discard outer layer of sprouts, peeling off any additional layers that are bruised. Place all ingredients in sheet pan, giving a few stirs until everything is evenly spread out and generously coated with salt, pepper and seasonings.

Roast for 15 minutes and stir, making sure to flip the sprouts over. The bacon fat gives it a nice flavor on the face! Taste, add more salt and pepper if desired.

Roast for an additonal 15-20 minutes, or until desired doneness. I like mine with a little char on them so I go closer to 25. Be sure to keep stirring each time you check to distribute the bacon fat and sweetness of the apples around the pan!

Enjoy with a steak or mashed potatoes - or add an egg on top and have it for breakfast! Wow, my mouth is already watering!
