Chicken Bacon Jeffs




Y'all! I am so so so so so excited to have my husband's signature recipe on the blog today! (Did I say signature? Maybe I meant one and only?!)


Several years ago - prior to us even having kids - we went to a restaurant for dinner and had some sort of bacon-wrapped chicken dumpling thing and Jeff became obsessed with creating his own version.


Soon, it became affectionately known among our friends as "Chicken Bacon Jeffs". (Don't ask...)

INGREDIENTS :


1 package of chicken tenders

1 jar diced jalapenos

1 package bacon

1 block cream cheese, (room temp makes it easier)

1 jar barbecue sauce

Toothpicks, soaked in water


DIRECTIONS :


Between two pieces of plastic wrap, flatten chicken breasts with a mallet or rolling pin just a bit.


On each piece of chicken, layer cream cheese and jalapenos. (I also like to sprinkle a bit of chili powder, but this is Jeff's recipe and I'm not trying to hijack that, but I just wanted to throw that out there.)


Roll up each chicken tender and carefully wrap bacon around it. Secure with toothpicks.


Preheat grill or grill pan over medium-high heat.


Arrange on a rimmed baking sheet and baste with BBQ sauce.


Grill for 8-10 minutes, turning occasionally until cooked through.
