Turkey Meatball Bowls



It is absolutely no secret that meatballs are a crowd pleaser in our family. If you follow along on Instagram, I probably make a version of meatballs once a week. But now that my sister encouraged me to make them this NEW way, we might be having them even MORE than that!!

This is basically a meatball bar, okay? I mean, what could be better than that, right?

Turkey Meatball Bowls

INGREDIENTS

One bag frozen turkey meatballs

1/2 cup harissa sauce

1 cup bbq sauce

3 sweet potatoes, peeled + cubed

1/2 small red bell pepper, diced

1/2 small green bell pepper, diced

1 cup shaved brussel sprouts

2 cloves garlic, minced

Salt

Pepper

Olive Oil

Rosemary

For Toppings :

Goat cheese (or other soft cheese)

Avocado

Diced Red Onion

Cilantro

DIRECTIONS

Preheat oven to 425.

In a large skillet, warm up harissa sauce and bbq sauce together. Add frozen meatballs and cook according to package directions.

Meanwhile in rimmed baking sheet, throw in sweet potatoes and 2-ish tablespoons of olive oil. Season with salt, pepper and sprinkle with dried rosemary. Bake for 15 minutes, stir, and then bake for 15 minutes more, until tender and brown.

While the potatoes are cooking, put 1 tbs olive oil in another skillet. Throw in the minced garlic for 1 - 2 minutes, until hot and fragrant. Add bell peppers and brussel sprouts, sauteing until soft. Season with salt and pepper.

Now it's time to assemble the bowls. We lay all of our stuff out in an assembly line and make them as we go.

On the bottom of my bowl, I put half sweet potatoes and half veggie mixture, as pictured below.


Next, we add a few meatballs right on top of all the yummy veggies. (My kids prefer meatballs without sauce, so I always cook a few non-sauced meatballs in the oven at the same time).


Last - and most importantly - we add our toppings. I like goat cheese because it melts all into everything else and makes it taste super rich and yummy. And, it's goat cheese. My favorite. But you could do cheddar cheese or pepper jack. Try different mixes and see what you like.

Also - we like adding a bit of avocado in there, along with some diced raw onions and cilantro! I cut mine as I go, but my kids mix it all together first.

Y'all - you have to make this for dinner TONIGHT. It's the perfect comfort food meal, packed with lean protein AND veggies! The kids will NOT even know it's good for them!
